Snowed In and Lovin' It... Call Ignacio If You Need to Be Shoveled Out

We made it out this morning for London and Maddie's first Mendham Patriots basketball clinic, but the snow has been falling since we picked them up at Mendham Township Elementary School and headed home. I'd say we have 2 to 3 inches on the ground already, and they're promising 5 to 8 more inches plus some ice tonight. While I was hoping to post a picture before London, Maddie, Rex and I settle in for a night of Scrabble in front of a roaring fire, it looks like we'll have to wait for daylight tomorrow...and we'll hope to have a snowman for you. Meanwhile, I'm making good progress rating the 5,271 unrated songs on my iPod Classic... found a few five star gems along the way, including Savage Garden!

If you're snowed in here in Morris County, NJ, but would rather not be, call Ignacio (973) 691-2699 and his team will shovel you out for a reasonable price. We've used Ignacio for the past year or so for all of our snow shoveling, lawn mowing, and landscaping. Be sure to tell him Roxy sent you!

Having a wonderful time snowed in here as well! Since going out was not an option in this weather, I made the most of my time and did some cooking. I made a big pot of turkey chili and home made buttermilk cornbread to go with it. (that and a fresh salad of baby greens made a wonderful dinner) A nice pot of lentil soup, as well as a pot of marinara sauce were simmering on the stove all day as well. Guess I should be set for meals this week....I am even using the left over buttermilk for homemade, from scratch, pancakes for brunch tomorrow. Apparently being stuck inside during a storm brings out the inner Martha Stewart in me.

Who won the scrabble game?

Mary,

Turkey chili and homemade buttermilk cornbread sounds terrific. We'll sled right on over!

I'm really impressed with your homemade pancakes... Rex threw some chocolate chips in with the Bisquick this morning and we enjoyed pancakes, too.

The Scrabble game was a close one... we played on two teams, London and Roxy vs. Maddie and Rex. Rex and Maddie were beating the pants off of us for most of the game, but London & I made a huge comeback late in the game. We won by three points, but only because we ran out of letters and Rex and Maddie had to subtract 6 points for their remaining letters at the end of the game!

Mariuca,
The four of us are headed out into the snow right now for sledding, and we'll find out soon if it's the kind of snow that packs well enough to make a snowman for you.

Sounds like the whole family had a wonderful time while being snowed in. I can send you the recipe for the buttermilk pancakes, it is not only yummy and easy as can be, but a lot less fattening than the Bisquick ones. (I use low fat (1%) buttermilk) The best part is they do not take any loner to mix up than those made from a mix!

Congrats on the close scrabble game!

Mary,
Please do send along your recipe for buttermilk pancakes, and I'll post it either here or on my Rex's Recipes blog, giving you full credit of course.
